Meet Our Chef, Justin Paruszkiewicz

Chef Justin was a recent winner on Guy Fieri’s Guy’s Grocery Games, early in 2024.

The Bottle Run has partnered with Chef Justin in order to bring our guests a delightful menu of gourmet deli sandwiches and salads.

Inspired by the vineyards, Chef Justin features farm-to-table greens from the local Sower’s Purse Micro Farm based in Benton Harbor, Michigan. (Local greens available June - September)

Leaning into his own experiences at the local Southwest Michigan wineries, Chef Justin created a menu that is unique and approachable.  Not too heavy, his wine country-inspired bites burst with fresh flavors that will pair beautifully with wines in your glass.

Menu Options

The week before your scheduled tour date, you will receive and email requesting your lunch selections. First, book your tour date. Then make your menu selections. All of The Bottle Run Signature Tours include a choice of a handcrafted farm-to-table sandwich OR salad for each guest, with a group side to share.

SANDWICHES

California Club

Freshly shaved turkey breast, with bacon, avocado, tomato, fresh greens, and dijonnaise on homemade focaccia bread.

Suggested wine paring: unoaked chardonnay or viognier.

Muffaletta

Thinly sliced mortadella, genoa salami, fresh mozzarella, homemade olive salad, and fresh greens on homemade focaccia bread.

Suggested wine paring: dry riesling or sauvignon blanc.

Chicken Salad

Fresh shredded chicken breast with pecans, green onions, grapes, and parsley, topped with fresh greens, sliced beefsteak tomato and lemon aioli on homemade focaccia bread.

Suggested wine paring: sparkling rosé or brut.

Hummus Wrap (V)

Fresh whipped hummus, tomato, cucumber, shaved red onion, and fresh greens served in a spinach wrap. 

Suggested wine paring: dry rosé.

Caprese (V)

Fresh mozzarella, tomato, fresh basil, and balsamic vinaigrette on homemade focaccia bread.

Suggested wine paring: oaked chardonnay or marsanne.

French Country Ham & Cheese

Shaved country ham, baby Swiss, French dijon cream, greens, and tomato on homemade focaccia bread.

Suggested wine paring: cabernet franc.


SALADS

California

Chopped turkey breast, tomato, cucumber, red onion, avocado, and chopped bacon served on a bed of local fresh greens with balsamic vinaigrette.

Suggested wine paring: unoaked chardonnay or viognier.

Tuna Nicoise

Wild caught tuna, fresh Michigan greens, hard-boiled egg, green beans, cherry tomato, olives, and Yukon potato with preserved lemon vinaigrette.

Suggested wine paring: dry traminette.

Mediterranean (V)

Fresh spring greens, kalamata olives, tomato, cucumber, shaved red onion, feta cheese, and fresh Greek herbs with balsamic vinaigrette.

Suggested wine paring: grüner veltliner.

Michigan Summer Greens (V)

Fresh Michigan greens, cherry tomato, pickled red onion, shaved cucumber, radish, nut and seed crumble with preserved lemon vinaigrette.

Suggested wine paring: seyval blanc.

Soba Noodle Bowl (V)

Carrot, cucumber, pickled red onion, avocado, cilantro, radish and sesame seeds with sweet Asian vinaigrette over chilled soba noodles.

Suggested wine paring: off-dry riesling.
